Brown Butter Licorice Ice Cream

Notes

I might try browning the milk powder in the oven next time. There's no actual butter in this recipe, but the browned milk powder adds a nutty flavor.


Ingredients

  • 40 g non-fat milk powder
  • 160 g sugar
  • 2 tbsp licorice powder
  • 1 tsp salmiak
  • 1.5 g ice cream stabilizer
  • 400 g heavy cream
  • 280 g milk
  • 2 egg yolks

Instructions

    Brown non-fat milk powder in a saucepan until golden. Stir continuously to prevent burning.

    In a bowl , combine dry ingredients: sugar , licorice powder , salmiak , ice cream stabilizer , and the browned milk powder.

    Combine heavy cream (36%), milk (3%) and the dry ingredient mixture in a saucepan . Heat to 85°C, stirring constantly.

    Let the mixture cool slightly, then gently whisk in egg yolks .
  5. 5.
    Allow the mixture to cool completely and let it rest.
  6. 6.
    Pour into an ice cream maker and churn.
